We can’t wait to try this recipe!

From the birthplace of Aphrodite comes a love story with buttery layers of crispy phyllo and the fluffiest soufflé egg filling. The Mediterranean goddess of quiche’s.

What’s more attractive than local asparagus nestled in a fluffy egg filling of Greek yogurt, fresh aromatics of mint, dill with feta and our beloved halloumi? This is Mediterranean pie is fit for the Gods! Enjoy!😉🤍🇨🇾🇬🇷

1/4 cup unsalted butter, melted
2 tablespoons olive oil
12 large eggs, room temperature
1/2 cup Greek plain yogurt
1 tbsp grainy dijon mustard
2 green onions thinly sliced white, light and dark green parts
2 tbsps finely chopped fresh mint
2 tbsps finally chopped dill
1 tsp sea salt
1 tsp fresh ground black pepper
100g Krinos feta cheese, crumbled
14 Asparagus spears, woody ends trimmed
8 phyllo sheets, thawed as per package directions
1/2 cup grated Krinos halloumi cheese

Preheat oven to 350ºF.
Mix melted butter with oil and using a pastry brush, brush bottom and sides of a 9x3 inch springform pan.
In a large bowl, whisk together eggs, yogurt and mustard. Stir in onions, mint and dill.Season with salt and pepper.
Working quickly to avoid the phyllo from drying out, using a pastry brush, brush each sheet of phyllo with butter mixture. Layer them on top of each other in pan with edges of phyllo draping over sides of pan alternating the each phyllo sheet.
Cut 6 of the asparagus spears into 1/4,inch pieces and spread evenly on top of the phyllo. Top with feta and fill with egg mixture. Sprinkle evenly with grated halloumi and arrange remaining asparagus spears on top. Tuck in phyllo edges just over the pan rim. Gently brush phyllo tops with remaining butter mixture and garnish phyllo edge with sesame seeds.
Bake for 40-45 minutes or until egg has set and phyllo is dark golden.

If you’re feeling adventurous this summer and want to try smoking a different cut of meat, Chef Erica recommends a Picanha. ✨

SMOKED PICANHA

Wrapped in a beautiful fat cap, this Brazilian cut is incredibly tender, packed with beefy flavour, and one of my favourite things to throw on the smoker.

The secret is giving it a little patience. Start low and slow, then finish it hot to render that fat cap and build an incredible crust while keeping the inside perfectly medium-rare.

Here’s exactly how I do it:

• Trim and tidy the fat cap, then lightly score it.
• Season generously with Traeger Anything Rub.
• Smoke at 225°F until the internal temperature reaches 110°F.
• Remove from the smoker and let it rest for about 1 hour.
• Return it to the smoker at 450°F, fat cap down, until it reaches 135°F.
• Rest another 15 minutes, then slice against the grain.

Finish it with a generous spoonful of fresh chimichurri and serve it family-style around the table.
